Ingredients:

- 200 grams/ 2 cups of okra (bhindi)
- 2 tablespoons of refined oil
- 8-9 seeds of fenugreek seeds ( methi dana)
- 1/2 teaspoons of cumin seeds (jeera)
- 1 green chilli chopped finely
- 1/2 teaspoon of ginger- garlic paste
- 1/2 teaspoon salt to taste
- 1/4 teaspoon of turmeric powder ( haldi)
- 1 teaspoon of red chilli powder( lal mirch)
- 1 teaspoon of fennel seeds powder
- 1 teaspoon of coriander powder
- 1 teaspoon of lemon juice
Method:
- First wash the bhindi with fresh water wipe it clean, dry using a kitchen towel/paper towel.
- Now cut and discard the head and tail of the bhindi.
- Then chop them, when the knife gets sticky, wipe it with the kitchen towel.
Making the achari bhindi:
- Heat the refined oil in a pan on medium heat.
- Add fenugreek seeds.Let them pop.
- Add cumin seeds and green chilli to it.
- Add ginger- garlic paste and let it turn golden brown.
- Saute it for 30-40 seconds.
- Now add the chopped bhindi. Stir well
- Add salt to taste, turmeric powder, red chilli powder, coriander powder and fennel seeds powder.
- Mix well all the spices and let it cook and do cover the lid.
- Finally add some fresh lemon juice and stir well to combine.
- Turn off the stove.
- Garnish with freshly cut coriander.
- You can add some achar masala to it as well.
Your achari bhindi is ready. Serve hot with chapatis/ naan.
